I mostly have memories of watching the original CBS run of MI with my dad. I can remember scenes, but not the eps they were in. See if you hard-core fans can identify these episodes for me. I'm sure I have some of the details wrong.
Barney Collier and Jim Phelps go undercover in some kind of prison camp. Barney assumes a Spanish accent. Cinnamon and Roland play the part of visiting doctor and nurse. I think their mission is to identify an agent and rescue him from the prison, but I could be wrong on that. I clearly recall, at the episode's climax, the team in a Plymouth (I think) station wagon busting through the prison camp's fence with the other prisoners cheering them on and the signature "Mission: Impossible" theme playing.
I'm afraid I have even foggier memories of this one. No idea as to the main plot. I recall the ending scene (I think) in which the bad guy bursts through a door to find 2 or 3 IMF team members racking shotguns and drawing down on him. I remember thinking, at the time, that this was about as direct as I'd ever seen the team act.
Roland is posing as a prisoner. The idea is to make it seem as if he is suffering a heart attack. Barney uses a cool radio-controlled hover craft to get the necessary drug to him through the place's ventilation system. This may have been a two-part ep.
Cinnamon is captured and tortured for information. They use her claustrophobia against her. My dad did not like this one at all. I recall being distressed by seeing a well-established character going through the torture.
Roland assumes the identity of a man on Death Row. We see him being taken to the gas chamber. It is all a ruse, of course, to get another guy to name his crime boss. This was a very controversial ep. I remember a TV Guide Magazine article about it in which the late Martin Landau spoke of doing the scene. He said it was the most difficult scene he'd ever done.
Paris assumes the identity of some kind of prophet or cult leader. They fake him surviving a massive electrocution originally set up by someone else.

"The Numbers Game".
You probably know she also played Anna Rojak in my fave ep; "The Bunker Parts 1& 2"
I'll take her Cat Woman over Michelle's anytime. IMHO, her femininity leaves Michelle's in the dust.

Next question: Name the episode where Cinnamon picks up the mission assignment.

Correctdomundo! Now, what are the only two other things in MI history that happen in this episode?

Dan Briggs wasn't in it and Roland Hand was the team leader. The reason being that Steven Hill was suspended for refusing to work on the Sabbath. This is aso why he was replaced by Peter Graves as Jim Phelps.
Here's one for you. A total of 15 MI eps were different from the rest of the series in what regard?

Close. The two things are: the briefing was in Cinnamon's apartment, and they were dressed in casual clothes.
In answer to your question, I'm going to say that those were the episodes Sam Elliott appeared in.

Well, strictly speaking, the two things I mentioned never happened in any other ep either. The team leader was out of action and another team member took the lead.
On the 15 eps: No. Try again.

In regards to Steven Hill, when he was hired he did tell the producers that he was an Orthodox Jew and observed the Sabbath. I just think they didn't realize that he meant it.

There are 15 eps in which there is no recorded mission briefing at the beginning.

From the IMDB trivia board:
According to Robert H. Justman in his book "Star Trek: The Real Story", this show's famous theme was not the first one written. Lalo Schifrin had written a main theme, but creator and executive producer Bruce Geller decided that it was inappropriate. Instead, Geller used some chase music Schifrin had written for the end of the first episode. That throwaway musical cue became one of the most famous and recognizable television show themes in history.
