That is due to the time Apple uses to release new content. New movies and TV shows and episodes are released on Apple TV+ night night before the advertised date, specifically at, I believe, 9pm ET. That means that the season premiere will be made available in the US on the night of Tuesday, Jan. 28 instead of the early morning of Wednesday, Jan. 29.
Side Quest is not the name of the season. As the press release says, Side Quest is a new anthology series that will premiere the same day Mythic Quest season 4 ends on March 25.
