How about it ends in the episode where they go to the North Pole and Raj, Leonard, and Howard come back without Sheldon. They don't wake him up on the day they leave. The spin-off is called Cold Sheldon.
Maybe the episode where Sheldon leaves for Bozeman Montana. You can call that one No Sheldon

I think Sheldon stuck in the North Pole would be good for at least a mini series!
Alternately, they could have ended the series abruptly when Sheldon got soaked in the rain (that day on the bench next to the man with the umbrella). The spin-off could have been called Mold Sheldon.

If the series had end with the episode where Sheldon eats so much Thai food that mitosis sets in… and then there are two of him …the sequel could have been called “Twin Geeks Sheldon”.

On the topic of criminal crustaceans, you both have a point. Lemons, on the comedy angle because Red Mobster refers to the restaurant Red Lobster which makes it funny. Knixon, on Raj being a brown (not red) Indian and the the color difference between a cooked and an uncooked lobster. Sheldon would side with Knixon while Leonard with Lemons. Mary Cooper would see both sides.
A mobster lobster being cooked implies a gangland hit, much like when a human mobster is said to be sleeping with the fishes. But since lobsters already sleep with fishes that wouldn't work

If the series had ended with the episode before Amy showed up to fan-the-coitus-flame buried deep within Sheldon’s psyche, the sequel could have been called: "Saving Scientist Cooper".

There was a show called "Judging Amy", so how about a pre-Shamy show called "Judgy Amy" where she goes around correcting people. Or a post-coital Shamy show called The Coitus Files

This was already done “in show”...during the time when Sheldon still referred to Amy as: a-girl-who-is-a-friend-but-not-my-girlfriend. It was in these early stages that the guys expressed their dislike for Amy because of her superior/condescending/judgy ways.
Plus "correcting" someone and "judging" someone are not the same thing.
