Cersei is planning to hire the Golden Company to fight whatever's left after Dany and Jon battle the Night King. She figures it'll be a walk, since the company is 10,000 fighters strong. But- what's to keep them from taking over, after they win?

Everything with Cersei is immediate gratification. She has always looked a the short term vs. the long term. All she cares about now is winning, then she'll worry about that later. The book goes into more detail how foolish it was to let the faith militant take over King's Landing, that's just one example.
