The Disney+ website has a runtime of 56:25 for episode 1 and 43:57 for episode 2, which would round up to 57 and 44, respectively, and is what appears on TMDB as well.

Shouldn't the runtime 56 since it's 56:25 and not 56:30 to make it 57?

No, we always round the duration up.
If you have only 56 minutes available, you will not be able to completely see an episode of 56 minutes and 25 seconds.
