If you search for "Iron Man", for example, you get a response with a list of iron man movies for results. But if you add another word to the query, let's say, "Stark", then the response shows no results at all.
Is there a method I'm missing allowing to search for movies by title+overview+keywords? or al least 2 of those?

At this time there is not. For movies, the only searchable fields are the title fields.

Ok, well then I introduce the second issue. Why while "Iron Man" returns results, "Iron Man Stark" doesn't? How many missing words does the search method accept?

What movie are you specifically looking for?
Probably not many (in fact, zero in most cases), we put way more focus on ngram searches than "phrase" searches.
